A vegetarian Indian dish in the spirit of Pondicherry cooking — Pondicherry Sabudana Mirchi brings a mirchi touch with a classic jalfrezi finish. About 35 minutes from fridge to table.

Ingredients

  • Garam Masala1/2 tsp
  • Green Chili4, slit
  • Coriander Powder1 tsp
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Red Chili Powder1.5 tsp
  • Sago (Sabudana)1 cup, soaked

Optional extras

  • Ghee1 tbsp

Instructions

    Soak or rinse dals/grains if the dish uses them.

    Pressure-cook or simmer the base until soft.

  3. 3

    Prepare a tempering of ghee, cumin, garlic, and chili.

    Pour tempering over the cooked base.

    Simmer briefly to marry flavours.

    Mash lightly if desired; garnish with cilantro.

  7. 7

    Serve with rice or roti.

Finish with a spoon of ghee for shine and aroma.
