A non-vegetarian Indian dish in the spirit of Hampi cooking — Mutton Hariyali Sabzi brings a hariyali touch with a classic sabzi finish. About 63 minutes from fridge to table.

Ingredients

  • Garam Masala1/2 tsp
  • Spinach100 g
  • Mint Leaves1/2 cup
  • Fresh Cilantro1/2 cup
  • Mutton500 g, on the bone
  • Red Chili Powder1 tsp

Optional extras

  • Ghee1 tbsp
  • Lemon1/2

Instructions

    Heat oil or ghee in a heavy kadhai over medium heat.

    Add cumin or mustard seeds and let them crackle.

    Saute onion until golden, then stir in ginger-garlic paste.

    Add tomatoes and powdered spices; cook until oil separates.

    Add the main ingredient with a splash of water; cover and simmer.

    Uncover, adjust salt and spice, and cook to the desired consistency.

    Finish with garam masala and fresh cilantro.
