A non-vegetarian Indian dish in the spirit of Kanchipuram cooking — Mustard Jhinga Pickle brings a mustard touch with a classic pickle finish. About 28 minutes from fridge to table.

Ingredients

  • Garam Masala1/2 tsp
  • Cumin Seeds1 tsp
  • Coriander Powder1 tsp
  • Mustard Seeds1 tbsp
  • Prawns350 g, cleaned
  • Mustard Oil2 tbsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped
  • Lemon1/2

Instructions

    Heat oil or ghee in a heavy kadhai over medium heat.

    Add cumin or mustard seeds and let them crackle.

    Saute onion until golden, then stir in ginger-garlic paste.

    Add tomatoes and powdered spices; cook until oil separates.

    Add the main ingredient with a splash of water; cover and simmer.

    Uncover, adjust salt and spice, and cook to the desired consistency.

    Finish with garam masala and fresh cilantro.

Chef's tip

Rest 5 minutes off heat so the spices settle.
