A vegetarian Indian dish in the spirit of Jorhat cooking — Jorhat Mixed Veg Poriyal brings a badami touch with a classic poriyal finish. About 47 minutes from fridge to table.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Heavy Cream3 tbsp
  • Tomato2, chopped
  • Mixed Vegetables250 g, chopped
  • Almonds12, blanched

Optional extras

  • Green Chili1-2, slit
  • Fresh Cilantro2 tbsp, chopped

Instructions

    Soak or rinse dals/grains if the dish uses them.

    Pressure-cook or simmer the base until soft.

  3. 3

    Prepare a tempering of ghee, cumin, garlic, and chili.

    Pour tempering over the cooked base.

    Simmer briefly to marry flavours.

    Mash lightly if desired; garnish with cilantro.
