
Palakkad Sweet Potato Nimbu
A vegetarian Indian dish in the spirit of Palakkad cooking — Palakkad Sweet Potato Nimbu brings a nimbu touch with a classic salad finish. About 44 minutes from fridge to table.
Ingredients
- Ginger Garlic Paste1 tbsp
- Saltto taste
- Cumin Seeds1 tsp
- Vegetable Oil2 tbsp
- Lemon2
- Sweet Potato250 g, chopped

- Green Chili1-2, slit
- Curry Leaves1 sprig
Instructions

Heat oil or ghee in a heavy kadhai over medium heat.

Add cumin or mustard seeds and let them crackle.

Saute onion until golden, then stir in ginger-garlic paste.

Add tomatoes and powdered spices; cook until oil separates.

Add the main ingredient with a splash of water; cover and simmer.

Uncover, adjust salt and spice, and cook to the desired consistency.

Finish with garam masala and fresh cilantro.

Rest a minute, then serve hot.
