
Ludhiana Squid Pickle
A non-vegetarian Indian dish in the spirit of Ludhiana cooking — Ludhiana Squid Pickle brings a saffron touch with a classic pickle finish. About 28 minutes from fridge to table.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Vegetable Oil2 tbsp
- Saffrona pinch
- Milk2 tbsp, warm
- Squid400 g, rings

- Fresh Cilantro2 tbsp, chopped
- Lemon1/2
Instructions

Heat oil or ghee in a heavy kadhai over medium heat.

Add cumin or mustard seeds and let them crackle.

Saute onion until golden, then stir in ginger-garlic paste.

Add tomatoes and powdered spices; cook until oil separates.

Add the main ingredient with a splash of water; cover and simmer.

Uncover, adjust salt and spice, and cook to the desired consistency.

Finish with garam masala and fresh cilantro.

Rest a minute, then serve hot.
