A non-vegetarian Indian dish in the spirit of Alleppey cooking — Alleppey Lamb Phall brings a phall touch with a classic tikka finish. About 75 minutes from fridge to table.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Cumin Seeds1 tsp
  • Vegetable Oil2 tbsp
  • Lamb500 g, cubed
  • Red Chili Powder1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped
  • Curry Leaves1 sprig

Instructions

    Heat oil or ghee in a heavy kadhai over medium heat.

    Add cumin or mustard seeds and let them crackle.

    Saute onion until golden, then stir in ginger-garlic paste.

    Add tomatoes and powdered spices; cook until oil separates.

    Add the main ingredient with a splash of water; cover and simmer.

    Uncover, adjust salt and spice, and cook to the desired consistency.

    Finish with garam masala and fresh cilantro.

    Rest a minute, then serve hot.
