A vegetarian Indian dish in the spirit of Faizabad cooking — Boatman's Feast Makhana brings a boatman's touch with a classic yakhni finish. About 50 minutes from fridge to table.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Cumin Seeds1 tsp
  • Red Chili Powder1 tsp
  • Makhana (Fox Nuts)2 cups

Optional extras

  • Ghee1 tbsp
  • Fresh Cilantro2 tbsp, chopped
  • Lemon1/2

Instructions

    Heat oil or ghee in a heavy kadhai over medium heat.

    Add cumin or mustard seeds and let them crackle.

    Saute onion until golden, then stir in ginger-garlic paste.

    Add tomatoes and powdered spices; cook until oil separates.

  5. 5

    Add the main ingredient with a splash of water; cover and simmer.

Chef's tip

Rest 5 minutes off heat so the spices settle.
