
Saffron-Kissed Feast Soya
A vegetarian Indian dish in the spirit of Koppal cooking — Saffron-Kissed Feast Soya brings a saffron-kissed touch with a classic dosa finish. About 40 minutes from fridge to table.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Soya Chunks1.5 cups, boiled
Optional extras
- Fresh Cilantro2 tbsp, chopped
- Curry Leaves1 sprig
Instructions

Heat oil or ghee in a heavy kadhai over medium heat.

Add cumin or mustard seeds and let them crackle.

Saute onion until golden, then stir in ginger-garlic paste.

Add tomatoes and powdered spices; cook until oil separates.

Add the main ingredient with a splash of water; cover and simmer.

Uncover, adjust salt and spice, and cook to the desired consistency.

Finish with garam masala and fresh cilantro.

Keep the flame medium — rushing browns the base too fast.
