A non-vegetarian Indian dish in the spirit of Gaya cooking — Gaya Classic Spice-Garden Egg brings a spice-garden touch with a classic sigdi roast finish. About 36 minutes from fridge to table.

Ingredients

  • Saltto taste
  • Tomato2, chopped
  • Cumin Seeds1 tsp
  • Coriander Powder1 tsp
  • Eggs4

Optional extras

  • Green Chili1-2, slit
  • Ghee1 tbsp
  • Lemon1/2

Instructions

    Heat oil or ghee in a heavy kadhai over medium heat.

    Add cumin or mustard seeds and let them crackle.

    Saute onion until golden, then stir in ginger-garlic paste.

    Add tomatoes and powdered spices; cook until oil separates.

    Add the main ingredient with a splash of water; cover and simmer.

    Uncover, adjust salt and spice, and cook to the desired consistency.

    Finish with garam masala and fresh cilantro.

    Rest a minute, then serve hot.
