A vegetarian Indian dish in the spirit of Ichalkaranji cooking — Navratri Feast Ragi brings a navratri touch with a classic bhel mix finish. About 50 minutes from fridge to table.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Saltto taste
  • Tomato2, chopped
  • Cumin Seeds1 tsp
  • Red Chili Powder1 tsp
  • Finger Millet (Ragi)1 cup

Optional extras

  • Curry Leaves1 sprig
  • Lemon1/2

Instructions

    Heat oil or ghee in a heavy kadhai over medium heat.

    Add cumin or mustard seeds and let them crackle.

    Saute onion until golden, then stir in ginger-garlic paste.

    Add tomatoes and powdered spices; cook until oil separates.

    Add the main ingredient with a splash of water; cover and simmer.

    Uncover, adjust salt and spice, and cook to the desired consistency.

Chef's tip

Finish with a spoon of ghee for shine and aroma.
