Gentle simmered mackerel in a fragrant broth, finished with fresh herbs — the korean answer to "something light tonight". Ready in 27 minutes including prep.

Ingredients
- Saltto taste
- Garlic1, diced
- Ginger3 cloves, minced
- Mushrooms200 g
- Sesame Oil1 tbsp
- Stock or Broth1 litre
- Napa Cabbage300 g
- Gochugaru1/2 tsp
- Perilla Leavessmall handful
- Mackerel2 whole
- Gochujang2 tbsp
Instructions

Sweat the garlic in the Sesame Oil until translucent but not browned, about 5 minutes.

Add the ginger and gochugaru and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the mackerel.

Simmer gently until the mackerel is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with perilla leaves and a grind of black pepper.
Chef's tip
A final squeeze of rice vinegar just before serving lifts every other flavour.
