
Cardamom-Soft Bajra Sambar
A vegetarian Indian dish in the spirit of Nagercoil cooking — Cardamom-Soft Bajra Sambar brings a cardamom-soft touch with a classic sambar finish. About 36 minutes from fridge to table.
Ingredients
- Cumin Seeds1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Red Chili Powder1 tsp
- Pearl Millet (Bajra)1 cup
Optional extras
- Ghee1 tbsp
- Fresh Cilantro2 tbsp, chopped
- Lemon1/2
Instructions

Heat oil or ghee in a heavy kadhai over medium heat.

Add cumin or mustard seeds and let them crackle.

Saute onion until golden, then stir in ginger-garlic paste.

Add tomatoes and powdered spices; cook until oil separates.

Add the main ingredient with a splash of water; cover and simmer.

Uncover, adjust salt and spice, and cook to the desired consistency.

Finish with garam masala and fresh cilantro.
Chef's tip
A splash of water loosens a tight masala without dulling flavour.
