A non-vegetarian Indian dish in the spirit of Phagwara cooking — Phagwara Bowl Murgh Kothi brings a kothi touch with a classic sukka finish. About 45 minutes from fridge to table.

Ingredients

  • Chicken500 g, curry cut
  • Onion1, finely chopped
  • Tomato2, chopped
  • Cumin Seeds1 tsp
  • Coriander Powder1 tsp
  • Turmeric Powder1/2 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped
  • Curry Leaves1 sprig

Instructions

    Heat oil or ghee in a heavy kadhai over medium heat.

    Add cumin or mustard seeds and let them crackle.

    Saute onion until golden, then stir in ginger-garlic paste.

    Add tomatoes and powdered spices; cook until oil separates.

  5. 5

    Add the main ingredient with a splash of water; cover and simmer.

    Uncover, adjust salt and spice, and cook to the desired consistency.

Chef's tip

A splash of water loosens a tight masala without dulling flavour.
