A non-vegetarian Indian dish in the spirit of Kannur Coast cooking — Slow-Simmered Feast Gosht brings a slow-simmered touch with a classic gravy finish. About 65 minutes from fridge to table.

Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Onion1, finely chopped
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Mutton500 g, on the bone
Optional extras
- Green Chili1-2, slit
Instructions

Heat oil or ghee in a heavy kadhai over medium heat.

Add cumin or mustard seeds and let them crackle.

Saute onion until golden, then stir in ginger-garlic paste.

Add tomatoes and powdered spices; cook until oil separates.

Add the main ingredient with a splash of water; cover and simmer.

Uncover, adjust salt and spice, and cook to the desired consistency.

Finish with garam masala and fresh cilantro.
Chef's tip
Rest 5 minutes off heat so the spices settle.
