A vegetarian Indian dish in the spirit of Cooch Behar cooking — Sabudana Diwali-Night Chilli Fry brings a diwali-night touch with a classic chilli fry finish. About 36 minutes from fridge to table.

Ingredients

  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion1, finely chopped
  • Tomato2, chopped
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Sago (Sabudana)1 cup, soaked

Optional extras

  • Green Chili1-2, slit

Instructions

    Assemble spices and chop vegetables before lighting the stove.

    Temper mustard seeds, curry leaves, and dried chilies in oil.

    Add onion and green chili; saute until soft.

    Stir in the main ingredient and powdered spices.

    Cook covered, stirring occasionally, until done.

    Squeeze lemon or fold in coconut if the style calls for it.

    Adjust seasoning and serve.

A splash of water loosens a tight masala without dulling flavour.
