A vegetarian Indian dish in the spirit of Nanded cooking — Nanded Flour-Mill Vermicelli brings a flour-mill touch with a classic pulusu finish. About 40 minutes from fridge to table.

Ingredients

  • Onion1, finely chopped
  • Tomato2, chopped
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Red Chili Powder1 tsp
  • Vermicelli1 cup

Optional extras

  • Fresh Cilantro2 tbsp, chopped
  • Curry Leaves1 sprig

Instructions

    Heat oil or ghee in a heavy kadhai over medium heat.

    Add cumin or mustard seeds and let them crackle.

    Saute onion until golden, then stir in ginger-garlic paste.

    Add tomatoes and powdered spices; cook until oil separates.

    Add the main ingredient with a splash of water; cover and simmer.

Chop everything mise-en-place; the cook goes quickly once oil is hot.
