Crisp-edged patties of kimchi with a soft heart — pan-fried and made for dipping. 22 minutes of mostly hands-off cooking.
Prep 15 min Cook 7 min Serves 4 Medium
Ingredients
- Garlic1 small, grated
- Eggs1, beaten
- All-Purpose Flour100 g
- Sesame Oil3 tbsp, for frying
- Breadcrumbs80 g
- Gochugaru1 tsp
- Kimchi400 g, chopped
- Dipping Soy Sauce3 tbsp
Optional extras
- Perilla Leaveshandful, to finish
Instructions

Chop or mash the kimchi finely, then mix with the breadcrumbs, egg, grated garlic and gochugaru.

Season generously, then shape into 8 small patties with wet hands.

Chill for 15 minutes so they hold their shape in the pan.

Shallow-fry in the Sesame Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

Drain briefly and serve with yogurt, perilla leaves and wedges of rice vinegar.
