Potato Jeon

Crisp-edged patties of potato with a soft heart — pan-fried and made for dipping. About 22 minutes from fridge to table.

Prep 15 min Cook 7 min Serves 4 Medium

Ingredients

  • Garlic1 small, grated
  • Potato4
  • Eggs1, beaten
  • All-Purpose Flour100 g
  • Sesame Oil3 tbsp, for frying
  • Breadcrumbs80 g
  • Gochugaru1 tsp
  • Dipping Soy Sauce3 tbsp

Optional extras

  • Perilla Leaveshandful, to finish

Instructions

    Chop or mash the potato finely, then mix with the breadcrumbs, egg, grated garlic and gochugaru.

    Season generously, then shape into 8 small patties with wet hands.

    Chill for 15 minutes so they hold their shape in the pan.

    Shallow-fry in the Sesame Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

    Drain briefly and serve with yogurt, perilla leaves and wedges of rice vinegar.

Chef's tip

Let the dish rest 5 minutes off the heat before serving so the flavours settle.
