Crisp-edged patties of zucchini with a soft heart — pan-fried and made for dipping. 22 minutes of mostly hands-off cooking.

Ingredients
- Garlic1 small, grated
- Eggs1, beaten
- All-Purpose Flour100 g
- Sesame Oil3 tbsp, for frying
- Breadcrumbs80 g
- Zucchini3
- Gochugaru1 tsp
- Dipping Soy Sauce3 tbsp
Optional extras
- Perilla Leaveshandful, to finish
Instructions

Chop or mash the zucchini finely, then mix with the breadcrumbs, egg, grated garlic and gochugaru.

Season generously, then shape into 8 small patties with wet hands.

Chill for 15 minutes so they hold their shape in the pan.

Shallow-fry in the Sesame Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

Drain briefly and serve with yogurt, perilla leaves and wedges of rice vinegar.
Chef's tip
For deeper flavour, toast the gochugaru in the oil before adding anything wet.
