Gentle simmered enoki mushrooms in a fragrant broth, finished with fresh herbs — the korean answer to "something light tonight". Ready in 30 minutes including prep.

Ingredients
- Saltto taste
- Garlic1, diced
- Ginger3 cloves, minced
- Spring Onions3
- Soy Sauce1 tbsp
- Sesame Oil1 tbsp
- Stock or Broth1 litre
- Enoki Mushrooms200 g
- Gochugaru1/2 tsp
- Perilla Leavessmall handful
Instructions

Sweat the garlic in the Sesame Oil until translucent but not browned, about 5 minutes.

Add the ginger and gochugaru and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the enoki mushrooms.

Simmer gently until the enoki mushrooms is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with perilla leaves and a grind of black pepper.
Chef's tip
A final squeeze of rice vinegar just before serving lifts every other flavour.
