Gentle simmered sweet potato in a fragrant broth, finished with fresh herbs — the korean answer to "something light tonight". 30 minutes of mostly hands-off cooking.

Ingredients
- Saltto taste
- Garlic1, diced
- Ginger3 cloves, minced
- Spring Onions3
- Soy Sauce1 tbsp
- Sesame Oil1 tbsp
- Stock or Broth1 litre
- Sweet Potato3
- Gochugaru1/2 tsp
- Perilla Leavessmall handful
Instructions

Sweat the garlic in the Sesame Oil until translucent but not browned, about 5 minutes.

Add the ginger and gochugaru and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the sweet potato.

Simmer gently until the sweet potato is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with perilla leaves and a grind of black pepper.
Chef's tip
For deeper flavour, toast the gochugaru in the oil before adding anything wet.
