A clear, restorative korean soup starring bean sprouts — light on the palate, big on aroma. About 30 minutes from fridge to table.

Ingredients
- Saltto taste
- Garlic1, diced
- Ginger3 cloves, minced
- Spring Onions3
- Soy Sauce1 tbsp
- Sesame Oil1 tbsp
- Bean Sprouts300 g
- Stock or Broth1 litre
- Gochugaru1/2 tsp
- Perilla Leavessmall handful
Instructions

Sweat the garlic in the Sesame Oil until translucent but not browned, about 5 minutes.

Add the ginger and gochugaru and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the bean sprouts.

Simmer gently until the bean sprouts is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with perilla leaves and a grind of black pepper.
Chef's tip
For deeper flavour, toast the gochugaru in the oil before adding anything wet.
