Kasaragod Palak Kokum Soup

A vegetarian Indian dish in the spirit of Kasaragod cooking — Kasaragod Palak Kokum Soup brings a kokum touch with a classic soup finish. About 46 minutes from fridge to table.

Ingredients

  • Garam Masala1/2 tsp
  • Spinach300 g, chopped
  • Onion1, finely chopped
  • Cumin Seeds1 tsp
  • Coriander Powder1 tsp
  • Vegetable Oil2 tbsp
  • Red Chili Powder1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Heat oil or ghee in a heavy kadhai over medium heat.

    Add cumin or mustard seeds and let them crackle.

    Saute onion until golden, then stir in ginger-garlic paste.

    Add tomatoes and powdered spices; cook until oil separates.

    Add the main ingredient with a splash of water; cover and simmer.

    Uncover, adjust salt and spice, and cook to the desired consistency.

    Finish with garam masala and fresh cilantro.

    Rest a minute, then serve hot.

Chef's tip

A splash of water loosens a tight masala without dulling flavour.
