Jowar Baker's Jalfrezi
A vegetarian Indian dish in the spirit of Junagadh cooking — Jowar Baker's Jalfrezi brings a baker's touch with a classic jalfrezi finish. About 47 minutes from fridge to table.
Ingredients
- Garam Masala1/2 tsp
- Tomato2, chopped
- Turmeric Powder1/2 tsp
- Sorghum (Jowar)1 cup
Optional extras
- Green Chili1-2, slit
- Ghee1 tbsp
- Fresh Cilantro2 tbsp, chopped
- Lemon1/2
Instructions

Heat oil or ghee in a heavy kadhai over medium heat.

Add cumin or mustard seeds and let them crackle.

Saute onion until golden, then stir in ginger-garlic paste.

Add tomatoes and powdered spices; cook until oil separates.

Add the main ingredient with a splash of water; cover and simmer.

Uncover, adjust salt and spice, and cook to the desired consistency.

Finish with garam masala and fresh cilantro.

Rest a minute, then serve hot.

Keep the flame medium — rushing browns the base too fast.
