
Palak Haldi-Gold Tawa Fry
A vegetarian Indian dish in the spirit of Dewas cooking — Palak Haldi-Gold Tawa Fry brings a haldi-gold touch with a classic tawa fry finish. About 47 minutes from fridge to table.
Ingredients
- Spinach300 g, chopped
- Onion1, finely chopped
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Red Chili Powder1 tsp
Optional extras
- Ghee1 tbsp
- Fresh Cilantro2 tbsp, chopped
- Curry Leaves1 sprig
Instructions

Heat oil or ghee in a heavy kadhai over medium heat.

Add cumin or mustard seeds and let them crackle.

Saute onion until golden, then stir in ginger-garlic paste.

Add tomatoes and powdered spices; cook until oil separates.

Add the main ingredient with a splash of water; cover and simmer.

Uncover, adjust salt and spice, and cook to the desired consistency.

Finish with garam masala and fresh cilantro.

Rest a minute, then serve hot.
