
Kota Makhana Kheer
A vegetarian Indian dish in the spirit of Kota cooking — Kota Makhana Kheer brings a orchard touch with a classic kheer finish. About 39 minutes from fridge to table.
Ingredients
- Garam Masala1/2 tsp
- Tomato2, chopped
- Cumin Seeds1 tsp
- Turmeric Powder1/2 tsp
- Red Chili Powder1 tsp
- Makhana (Fox Nuts)2 cups

- Green Chili1-2, slit
- Curry Leaves1 sprig
Instructions

Heat oil or ghee in a heavy kadhai over medium heat.

Add cumin or mustard seeds and let them crackle.

Saute onion until golden, then stir in ginger-garlic paste.

Add tomatoes and powdered spices; cook until oil separates.

Add the main ingredient with a splash of water; cover and simmer.

Uncover, adjust salt and spice, and cook to the desired consistency.

Finish with garam masala and fresh cilantro.

Rest a minute, then serve hot.

A splash of water loosens a tight masala without dulling flavour.
