Fresh, zingy and full of texture: fish tossed with herbs and a sharp citrus dressing. About 15 minutes from fridge to table.

Ingredients
- Yogurt200 g
- Saltto taste
- Onion1/2, thinly sliced
- Fresh Cilantrohandful, torn
- Lemon1, juiced
- Olive Oil3 tbsp
- Tamarind Paste3 tbsp
- Fish500 g, firm fillets
- Chaat Masala1 tsp
Instructions

Whisk the lemon juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the fish — slice, shred or cube it so every forkful gets some.

Toss the fish with the onion, fresh cilantro and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lemon if it needs lift.
Chef's tip
For deeper flavour, toast the garam masala in the oil before adding anything wet.
