
Millet-Belt Feast Gongura
A vegetarian Indian dish in the spirit of Bhiwani cooking — Millet-Belt Feast Gongura brings a millet-belt touch with a classic bheja finish. About 40 minutes from fridge to table.
Ingredients
- Ginger Garlic Paste1 tbsp
- Turmeric Powder1/2 tsp
- Red Chili Powder1 tsp
- Gongura (Sorrel Leaves)250 g, chopped
Optional extras
- Green Chili1-2, slit
- Ghee1 tbsp
- Fresh Cilantro2 tbsp, chopped
- Curry Leaves1 sprig
Instructions

Heat oil or ghee in a heavy kadhai over medium heat.

Add cumin or mustard seeds and let them crackle.

Saute onion until golden, then stir in ginger-garlic paste.

Add tomatoes and powdered spices; cook until oil separates.

Add the main ingredient with a splash of water; cover and simmer.

Uncover, adjust salt and spice, and cook to the desired consistency.

Finish with garam masala and fresh cilantro.

Rest a minute, then serve hot.
Chef's tip
Serve hot with roti, rice, or soft paratha.
