Fresh, zingy and full of texture: octopus tossed with herbs and a sharp citrus dressing. About 15 minutes from fridge to table.

Ingredients

  • Saltto taste
  • Garlic1/2, thinly sliced
  • Olive Oil3 tbsp
  • Sesame Oil1 tbsp
  • Rice Vinegar1, juiced
  • Octopus400 g
  • Toasted Sesame Seeds1 tbsp
  • Perilla Leaveshandful, torn

Instructions

    Whisk the rice vinegar juice with the olive oil, salt and pepper for a bright, simple dressing.

    Prepare the octopus — slice, shred or cube it so every forkful gets some.

  3. 3

    Toss the octopus with the garlic, perilla leaves and the dressing just before serving.

    Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of rice vinegar if it needs lift.

Chef's tip

Taste and adjust the salt at the end; sauces concentrate as they reduce.
