Mushrooms Banh Mi

Warm bread wrapped around savoury mushrooms, crunchy salad and a cool sauce — handheld happiness. About 23 minutes from fridge to table.

Ingredients

  • Yogurt4 tbsp
  • Saltto taste
  • Tomato2, sliced
  • Fresh Cilantro1 handful
  • Baguette2
  • Mushrooms400 g
  • Jalapeño1
  • Shallots2 cloves, minced
  • Flatbread or Tortillas4
  • Lettuce1/2, shredded
  • Neutral Oil1 tbsp
  • Pickled Vegetables150 g

Optional extras

  • Mint Leaveshandful, to finish

Instructions

    Season the mushrooms with the garlic, salt and half the spices, then cook in the Neutral Oil until browned and juicy.

    Warm the flatbreads in a dry pan until soft and pliable, about 30 seconds a side.

    Stir the yogurt with a pinch of salt and a squeeze of lime for a quick sauce.

    Pile the mushrooms onto each bread with lettuce, tomato and the yogurt sauce.

  5. 5

    Roll tightly, wrap the bottom half in paper, and eat while the filling is still warm.

Chef's tip

A final squeeze of lime just before serving lifts every other flavour.
