Bamboo Shoots Banh Mi

Everything good rolled into one: juicy bamboo shoots, crisp vegetables and creamy sauce in a soft wrap. 23 minutes of mostly hands-off cooking.

Ingredients

  • Yogurt4 tbsp
  • Saltto taste
  • Tomato2, sliced
  • Fresh Cilantro1 handful
  • Baguette2
  • Bamboo Shoots300 g
  • Jalapeño1
  • Shallots2 cloves, minced
  • Flatbread or Tortillas4
  • Lettuce1/2, shredded
  • Neutral Oil1 tbsp
  • Pickled Vegetables150 g

Optional extras

  • Mint Leaveshandful, to finish

Instructions

    Season the bamboo shoots with the garlic, salt and half the spices, then cook in the Neutral Oil until browned and juicy.

    Warm the flatbreads in a dry pan until soft and pliable, about 30 seconds a side.

    Stir the yogurt with a pinch of salt and a squeeze of lime for a quick sauce.

    Pile the bamboo shoots onto each bread with lettuce, tomato and the yogurt sauce.

    Roll tightly, wrap the bottom half in paper, and eat while the filling is still warm.

Chef's tip

Taste and adjust the salt at the end; sauces concentrate as they reduce.
