Ingredients
- Chicken500 g

- Garlic1/2, thinly sliced
- Mint Leaveshandful, torn
- Olive Oil3 tbsp
- Lime1, juiced
- Fish Sauce2 tbsp
- Crushed Peanuts50 g
Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the chicken — slice, shred or cube it so every forkful gets some.

Toss the chicken with the garlic, mint leaves and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
