Crisp-edged patties of pork with a soft heart — pan-fried and made for dipping. About 32 minutes from fridge to table.

Ingredients
- Garlic1 small, grated
- Eggs1, beaten
- White Pepper1 tsp
- Fish Sauce1 tbsp
- Breadcrumbs80 g
- Pork500 g, sliced
- Glass Noodles50 g
- Neutral Oil3 tbsp, for frying
Optional extras
- Mint Leaveshandful, to finish
Instructions

Chop or mash the pork finely, then mix with the breadcrumbs, egg, grated garlic and white pepper.

Season generously, then shape into 8 small patties with wet hands.

Chill for 15 minutes so they hold their shape in the pan.

Shallow-fry in the Neutral Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

Drain briefly and serve with yogurt, mint leaves and wedges of lime.
Chef's tip
A final squeeze of lime just before serving lifts every other flavour.
