Crisp-edged patties of clams with a soft heart — pan-fried and made for dipping. About 19 minutes from fridge to table.

Ingredients

  • Garlic1 small, grated
  • Eggs1, beaten
  • White Pepper1 tsp
  • Fish Sauce1 tbsp
  • Breadcrumbs80 g
  • Clams800 g
  • Glass Noodles50 g
  • Neutral Oil3 tbsp, for frying

Optional extras

  • Mint Leaveshandful, to finish

Instructions

    Chop or mash the clams finely, then mix with the breadcrumbs, egg, grated garlic and white pepper.

    Season generously, then shape into 8 small patties with wet hands.

  3. 3

    Chill for 15 minutes so they hold their shape in the pan.

  4. 4

    Shallow-fry in the Neutral Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

  5. 5

    Drain briefly and serve with yogurt, mint leaves and wedges of lime.

Chef's tip

A final squeeze of lime just before serving lifts every other flavour.
