Smoky grilled shrimp with a bright marinade — charred edges, juicy centre, and a squeeze of lime to finish. About 19 minutes from fridge to table.

Ingredients
- Honey1 tbsp
- Salt1 tsp
- White Pepper1 tsp
- Lime1, juiced
- Fish Sauce2 tbsp
- Shrimp400 g
- Shallots3 cloves, crushed
- Lemongrass2 stalks
- Neutral Oil2 tbsp
Optional extras
- Mint Leaveshandful, to finish
Instructions

Whisk the Neutral Oil, lime juice, garlic, white pepper and salt into a quick marinade.

Coat the shrimp completely and let it sit for at least 20 minutes (overnight is even better).

Get the grill or griddle pan screaming hot.

Grill the shrimp in a single layer, turning once, until charred in spots and cooked through.

Rest for 5 minutes, then finish with mint leaves and extra lime.
Chef's tip
Don't move the shrimp for the first 3 minutes; a proper crust releases itself.
