Clams kissed by the grill, marinated the vietnamese way until the smoke and spice do all the talking. 19 minutes of mostly hands-off cooking.

Ingredients

  • Honey1 tbsp
  • Salt1 tsp
  • White Pepper1 tsp
  • Lime1, juiced
  • Fish Sauce2 tbsp
  • Shallots3 cloves, crushed
  • Clams800 g
  • Lemongrass2 stalks
  • Neutral Oil2 tbsp

Optional extras

  • Mint Leaveshandful, to finish

Instructions

    Whisk the Neutral Oil, lime juice, garlic, white pepper and salt into a quick marinade.

    Coat the clams completely and let it sit for at least 20 minutes (overnight is even better).

    Get the grill or griddle pan screaming hot.

  4. 4

    Grill the clams in a single layer, turning once, until charred in spots and cooked through.

    Rest for 5 minutes, then finish with mint leaves and extra lime.

Chef's tip

Don't move the clams for the first 3 minutes; a proper crust releases itself.
