Bamboo Shoots Sate Skewers

Fire-kissed skewers of bamboo shoots — smoky outside, juicy inside, gone in minutes. 27 minutes of mostly hands-off cooking.

Ingredients
- Yogurt3 tbsp
- White Pepper1 tsp
- Bamboo Shoots300 g
- Lime1, juiced
- Shallots3 cloves, crushed
- Lemongrass2 stalks
- Curry Powder1 tsp
- Neutral Oil2 tbsp
- Crushed Peanuts50 g
Optional extras
- Mint Leaveshandful, to finish
Instructions

Whisk the yogurt, neutral oil, garlic, white pepper and lime juice into a marinade.

Cut the bamboo shoots into even 3 cm chunks and coat well; marinate 30 minutes minimum.

Thread onto skewers with a little space between pieces so the heat can circulate.

Grill over high heat, turning every few minutes, until charred at the edges and cooked inside.

Slide off the skewers, rest 3 minutes, and dust with mint leaves.
Chef's tip
For deeper flavour, toast the white pepper in the oil before adding anything wet.
