A creamy, swooshable middle eastern dip built around cauliflower — built for torn bread and long evenings. 10 minutes of mostly hands-off cooking.

Ingredients
- Saltto taste
- Garlic2 cloves, grated
- Cauliflower1 head
- Lemon1/2, juiced
- Olive Oil3 tbsp, good and fruity
- Ground Cumin1/2 tsp
- Tahini4 tbsp
Optional extras
- Fresh Parsleyhandful, to finish
Instructions

Prepare the cauliflower — roast, boil or mash it depending on what it is, until completely soft.

Beat it smooth with the olive oil, adding it in a slow stream for a silky texture.

Season with the garlic, lemon juice, ground cumin and salt — taste as you go.

Swoosh onto a plate with a spoon-back of oil, a sprinkle of fresh parsley, and serve with warm bread.
Chef's tip
For deeper flavour, toast the ground cumin in the oil before adding anything wet.
