Bulgur Kebab

Marinated chunks of bulgur on skewers, charred over high heat and showered with herbs. 27 minutes of mostly hands-off cooking.

Ingredients
- Yogurt3 tbsp
- Garlic3 cloves, crushed
- Bell Pepper2
- Lemon1, juiced
- Olive Oil2 tbsp
- Ground Cumin1 tsp
- Paprika1 tsp
- Red Onion1
- Bulgur300 g
Optional extras
- Fresh Parsleyhandful, to finish
Instructions

Whisk the yogurt, olive oil, garlic, ground cumin and lemon juice into a marinade.

Cut the bulgur into even 3 cm chunks and coat well; marinate 30 minutes minimum.

Thread onto skewers with a little space between pieces so the heat can circulate.

Grill over high heat, turning every few minutes, until charred at the edges and cooked inside.

Slide off the skewers, rest 3 minutes, and dust with fresh parsley.
Chef's tip
Let the dish rest 5 minutes off the heat before serving so the flavours settle.
