Ingredients

- Onion1/2, thinly sliced
- Mint Leaves1 handful
- Lemon1, juiced
- Olive Oil3 tbsp
- Fresh Parsleyhandful, torn
- Fava Beans2 cans
- Bulgur150 g
Instructions

Whisk the lemon juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the fava beans — slice, shred or cube it so every forkful gets some.

Toss the fava beans with the onion, fresh parsley and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lemon if it needs lift.

Let the dish rest 5 minutes off the heat before serving so the flavours settle.
