A bright, herb-packed middle eastern salad where lamb meets a punchy dressing — fresh, loud and addictive. 20 minutes of mostly hands-off cooking.

Ingredients

- Onion1/2, thinly sliced
- Lemon1, juiced
- Olive Oil3 tbsp
- Romaine Lettuce1
- Fresh Parsleyhandful, torn
- Pita Bread2, toasted
- Lamb500 g, cubed
- Sumac1 tsp
- Radishes4
Instructions

Whisk the lemon juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the lamb — slice, shred or cube it so every forkful gets some.

Toss the lamb with the onion, fresh parsley and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lemon if it needs lift.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
