Fresh, zingy and full of texture: zucchini tossed with herbs and a sharp citrus dressing. About 15 minutes from fridge to table.

Ingredients

  • Saltto taste
  • Onion1/2, thinly sliced
  • Lemon1, juiced
  • Olive Oil3 tbsp
  • Romaine Lettuce1
  • Fresh Parsleyhandful, torn
  • Pita Bread2, toasted
  • Zucchini3
  • Sumac1 tsp
  • Radishes4

Instructions

    Whisk the lemon juice with the olive oil, salt and pepper for a bright, simple dressing.

    Prepare the zucchini — slice, shred or cube it so every forkful gets some.

    Toss the zucchini with the onion, fresh parsley and the dressing just before serving.

    Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lemon if it needs lift.
