Fresh, zingy and full of texture: okra tossed with herbs and a sharp citrus dressing. Ready in 15 minutes including prep.

Ingredients

  • Saltto taste
  • Onion1/2, thinly sliced
  • Lemon1, juiced
  • Olive Oil3 tbsp
  • Romaine Lettuce1
  • Fresh Parsleyhandful, torn
  • Pita Bread2, toasted
  • Okra400 g
  • Sumac1 tsp
  • Radishes4

Instructions

    Whisk the lemon juice with the olive oil, salt and pepper for a bright, simple dressing.

    Prepare the okra — slice, shred or cube it so every forkful gets some.

    Toss the okra with the onion, fresh parsley and the dressing just before serving.

    Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lemon if it needs lift.

Chef's tip

For deeper flavour, toast the ground cumin in the oil before adding anything wet.
