- Lemon1, juiced

- Green Beans400 g
- Romaine Lettuce1
- Fresh Parsleyhandful, torn
- Pita Bread2, toasted
- Sumac1 tsp

Instructions

Whisk the lemon juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the green beans — slice, shred or cube it so every forkful gets some.

Toss the green beans with the onion, fresh parsley and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lemon if it needs lift.

Taste and adjust the salt at the end; sauces concentrate as they reduce.
