A clear, restorative middle eastern soup starring ground lamb — light on the palate, big on aroma. About 40 minutes from fridge to table.

Ingredients
- Saltto taste
- Onion1, diced
- Garlic3 cloves, minced
- Lemon1
- Olive Oil1 tbsp
- Ground Cumin1/2 tsp
- Fresh Parsleysmall handful
- Stock or Broth1 litre
- Ground Lamb450 g
Instructions

Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

Add the garlic and ground cumin and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the ground lamb.

Simmer gently until the ground lamb is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh parsley and a grind of black pepper.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
