Gentle simmered green beans in a fragrant broth, finished with fresh herbs — the middle eastern answer to "something light tonight". 30 minutes of mostly hands-off cooking.

Ingredients
- Saltto taste
- Onion1, diced
- Garlic3 cloves, minced
- Lemon1
- Olive Oil1 tbsp
- Green Beans400 g
- Ground Cumin1/2 tsp
- Fresh Parsleysmall handful
- Stock or Broth1 litre
Instructions

Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

Add the garlic and ground cumin and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the green beans.

Simmer gently until the green beans is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh parsley and a grind of black pepper.
Chef's tip
For deeper flavour, toast the ground cumin in the oil before adding anything wet.
