A creamy, swooshable middle eastern dip built around eggs — built for torn bread and long evenings. 15 minutes of mostly hands-off cooking.

Ingredients
- Yogurt400 g
- Saltto taste
- Garlic2 cloves, grated
- Lemon1/2, juiced
- Olive Oil3 tbsp, good and fruity
- Eggs6
- Ground Cumin1/2 tsp
- Za'atar1 tbsp
Optional extras
- Fresh Parsleyhandful, to finish
Instructions

Prepare the eggs — roast, boil or mash it depending on what it is, until completely soft.

Beat it smooth with the olive oil, adding it in a slow stream for a silky texture.

Season with the garlic, lemon juice, ground cumin and salt — taste as you go.

Swoosh onto a plate with a spoon-back of oil, a sprinkle of fresh parsley, and serve with warm bread.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
