Warm bread wrapped around savoury pork, crunchy salad and a cool sauce — handheld happiness. 33 minutes of mostly hands-off cooking.

Ingredients

  • Yogurt4 tbsp
  • Saltto taste
  • Tomato2, sliced
  • Garlic2 cloves, minced
  • Olive Oil1 tbsp
  • Pita Bread4
  • Red Onion1
  • Pork500 g, cubed
  • Flatbread or Tortillas4
  • Lettuce1/2, shredded
  • Tzatziki Sauce200 g

Optional extras

  • Fresh Dillhandful, to finish

Instructions

    Season the pork with the garlic, salt and half the spices, then cook in the Olive Oil until browned and juicy.

    Warm the flatbreads in a dry pan until soft and pliable, about 30 seconds a side.

    Stir the yogurt with a pinch of salt and a squeeze of lemon for a quick sauce.

    Pile the pork onto each bread with lettuce, tomato and the yogurt sauce.

    Roll tightly, wrap the bottom half in paper, and eat while the filling is still warm.

Chef's tip

For deeper flavour, toast the dried oregano in the oil before adding anything wet.
