
Pad Thai
Thailand's national noodle dish — chewy rice noodles wok-tossed with shrimp, tangy tamarind sauce, egg ribbons and crushed peanuts.
Ingredients
- Garlic4 cloves, minced
- Vegetable Oil2 tbsp
- Eggs2
- Peanuts1/2 cup, roasted and crushed
- Sugar2 tbsp (palm sugar ideally)
- Lime2, wedges
- Fish Sauce2 tbsp
- Rice Noodles200 g, flat, soaked 30 min
- Shrimp300 g, peeled
- Bean Sprouts1 cup
- Shallots2, sliced
- Tamarind Paste3 tbsp
- Red Pepper Flakes1 tsp

Mix tamarind paste, fish sauce and sugar with 3 tbsp warm water — this is the sacred sweet-sour-salty balance.

Soak rice noodles in room-temperature water until bendable but still firm. They finish cooking in the wok.

Sear shrimp in hot oil for 1 minute per side, remove and set aside.

Fry garlic and shallots until golden, push aside, crack in the eggs and scramble loosely.

Add noodles and the tamarind sauce. Toss constantly 2-3 minutes until the noodles are tender and glossy.

Return shrimp, add bean sprouts and half the peanuts. One quick toss — sprouts should stay crisp.

Plate with remaining peanuts, chili flakes and lime wedges on the side.
Chef's tip
Taste the sauce before it hits the noodles — authentic pad thai should hit sour first, then salty, then sweet.
